On the Menu: Waffles

We found this at a yard sale:
Our breakfast the next morning was, inevitably, waffles. Waffles from scratch, now that the small remainder of the boxed mix we had was disposed of when we moved a few weeks ago. Kevin, the late sleeper that he is, bounded out of bed the morning after we bought the waffle iron and mixed up the batter. He calibrated the iron and watched as each waffle steamed as it cooked, then came out crisp and golden brown after about four minutes. Served with freshly brewed coffee and drizzled with Maine maple syrup, they made one heck of a breakfast, especially as we ate them next to a sunny window and watched our new friends the bluejays flit about and make their screechy call. We have a new favorite kitchen toy.
Waffles
from the Joy of Cooking
1 3/4 c. all purpose flour
1 T. baking powder
1 T. sugar
1/2 t. salt
3 eggs
1 stick of butter (1/2 cup), melted
1 1/2 c. milk
Mix together dry ingredients in a large bowl and throughly blend wet ingredients in another, smaller bowl. Make a well in the dry ingredients and our in the wet ingredients. Combine with a whisk, using as few strokes as possible. Cook as your waffle iron directs–for us, it took about 4 minutes per waffle. The batter steams out the sides of the iron until set, so once the steam stops, the waffle is almost done.
