We kept dinner quick and easy on the second day of Project Chicken. I mean, really simple. Here’s what we did:
We shredded some chicken meat, doused it in Sweet Baby Ray’s, and heated it up in a skillet. Then, we toasted some bread. Our main course, pulled chicken, was complete.
Kevin diced up some celery and added it to a box of stuffing. Seriously. He also put in the leftover roasted vegetables from the chicken for a little more flavor and texture.
Remember that cranberry pie I made? I still had about a quarter of the bag left, so I simmered them in sugar and water, added some orange juice, and made cranberry sauce.
We quartered the last of our Carolas, seasoned them with some Cajun spices, and roasted them in olive oil.
Dinner was served. It may have been a miscellaneous mishmash, but it was good.
